Kueh Chap Recipe (Pork stew)Ingredients1 bulb of garlic1 teaspoon of cloves1 teaspoon of black peppercorns2 star anise1 cinnamon stick1 teaspoon of 5 spices powder6 tablespoons of dark soy sauce6 tablespoons of light soy sauceFew cloves of garlic finely choppedSalt/white pepper to tasteLean pork meat/spare partsHard boil eggsDried tofu piecesRice noodlesInstructions1. Heat some oil in a pot and fry the finely chopped garlic till brownish and fragrant2. Add in cloves and peppercorns and stir fry for a bit with the garlic3. Add in 2.5 litres of water, bulb of garlic, star anise, cinnamon stick, 5 spices powder, dark soy sauce and light soy sauce4. Bring to boil for about 15 mins and add pork meat / spare parts5. Simmer for another 15 mins or until pork meat/spare parts is cooked and taste the soup6. Add salt, white pepper, more soy sauce to taste7. Add in hard boiled eggs8. Simmer for as long as you like for the pork meat/spare parts/eggs to absorb the taste of spices9. Add in drief tofu pieces in the last 20 mins10. Take out pork meat/spare parts / eggs and cut into bite pieces11. Serve with rice noodles
