Eggplant Fusilli


500 gfusilli
100 gsmoked bacon or minced meat
1red bell pepper
100 golives
50 mlolive oil
1big onion
1 clovegarlic
4 tomatoestomatoes
100 ggrated parmesan


Dice the onions small. Dice eggplant, courgette and pepper. Gently fry the bacon or minced meat together with the onions and garlic until the onions are soft, set aside when done. Fry the other diced vegetables and add in the peeled tomatoes. let it simmer until soft, and then puree in blender together with the olives. Add to the meat mixture and add the grated parmesan. Bring to flavour with pepper, salt and basil.

Serve with freshly boiled fusilli pasta.
