Lentil Tomato Soep
Ingredients
| 4 cm | ginger root |
| 25 g | coriander leaves |
| 150 g | red lentils |
| 1 | onion |
| 1 tbsp | mild curry |
| pinch | chilly |
| 2 cloves | garlic |
| 1 tin (400g) | chopped tomato |
| 1 tin (400g) | coconut cream |
Preparation
Peel the ginger root and finely chop it. Wash and chop the coriander leaves. Wash the lentils.
Stir fry the onion in a bit of oil for 8 minutes until it's caramelized. Add curry powder, garlic, ginger and chilly powder and fry for another 2 minutes. Put the lentils in the pan, stir one minute before adding the tomatoes, one tablespoon of the coriander, 600 ml of water and 1 tea spoon of salt. Add pepper according to taste.
Add the coconut cream and bring to a boil. Let it boil gently for another 25 minutes.
Serve with sprinkled coriander.
